Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt until well combined.
- In another bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until smooth and creamy.
- Add the eggs and vanilla extract to the butter mixture and mix until fully incorporated.
- Gradually add the dry mixture to the wet mixture and stir until just combined.
- Fold in the chopped maraschino cherries and semi-sweet chocolate chips.
Baking
- Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes until the edges are lightly golden and the centers look set but soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure your butter is softened before creaming. Consider adding a bit of maraschino cherry juice for a richer cherry flavor. Nuts can be added for a crunch.
