Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined to avoid overmixing.
  6. Gently fold in the chopped maraschino cherries and chocolate chips until evenly distributed.
Baking
  1. Drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden brown and the centers remain soft.
  3. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill the cookie dough for 30 minutes before baking to help the cookies maintain their shape. Substitute chocolate chips for white chocolate for a different flavor. Add sea salt on top after baking for a sweet and salty contrast.
