Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined to avoid overmixing.
- Gently fold in the chopped maraschino cherries and chocolate chips until evenly distributed.
Baking
- Drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown and the centers remain soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill the cookie dough for 30 minutes before baking to help the cookies maintain their shape. Substitute chocolate chips for white chocolate for a different flavor. Add sea salt on top after baking for a sweet and salty contrast.
