Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix well.
  3. Form the mixture into meatballs, about 1 1⁄2 inches in size, and place them on a lined baking sheet.
Cooking
  1. Bake for 15-18 minutes or until cooked through and golden brown.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook for 1-2 minutes until fragrant.
  4. Add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir and simmer for 4-5 minutes.
  5. Add grated Parmesan cheese and stir until melted and smooth.
  6. Add cooked meatballs to the skillet with the sauce and gently toss to coat.
  7. Simmer for another 2-3 minutes, then serve hot.

Notes

Serve meatballs over mashed potatoes or alongside a salad. Can be made ahead and frozen.
