Method
 

Preparation
  1. In a large bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  2. In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Blend in molasses and egg until fully combined.
  4. Gradually add the dry mixture to the wet mixture and blend until a dough forms.
  5. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
Baking
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out one disc on a floured surface to 1/4 inch thick. Cut shapes with cookie cutters.
  3. Bake cookies for 8-10 minutes, until edges are firm.
  4. Allow cookies to cool completely on a wire rack.
  5. Decorate cooled cookies with royal icing and optional sprinkles.
