Method

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat until shimmering.
  2. Add the bite-sized chicken pieces to the pot. Season them with salt, pepper, and 1 teaspoon of Italian seasoning. Sauté until the chicken is browned and cooked through, roughly 5-7 minutes.
  3. Stir in 2 cloves of minced garlic and cook for an additional minute, allowing the fragrance to fill your kitchen.
  4. Next, add the uncooked penne pasta, 3 cups of chicken broth, and 1 cup of marinara sauce. Stir well to combine.
  5. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot with a lid.
  6. Allow everything to simmer for about 12-15 minutes, or until the pasta is tender and most of the liquid has been absorbed.
