Preparation
- In a large pot, heat a drizzle of olive oil over medium heat until it glistens.
- Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.
- Toss in diced sweet potato and cook for an additional 3-4 minutes.
- Pour in the chicken broth and bring to a boil. Add cheese tortellini and cook according to package instructions, about 3-5 minutes until tender.
- Reduce the heat to low, stir in heavy cream, reserved sausage, and fresh spinach. Sprinkle in Italian seasoning, salt, and pepper to taste. Cook until spinach wilts, about 2-3 minutes.
- Ladle the soup into bowls and top with grated Parmesan cheese.
Notes
For a spicy kick, add red pepper flakes. For gluten-free, use gluten-free pasta. Experiment with additional vegetables for more nutrition.
