Preparation
  1. In a large pot, heat a drizzle of olive oil over medium heat until it glistens.
  2. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.
  4. Toss in diced sweet potato and cook for an additional 3-4 minutes.
  5. Pour in the chicken broth and bring to a boil. Add cheese tortellini and cook according to package instructions, about 3-5 minutes until tender.
  6. Reduce the heat to low, stir in heavy cream, reserved sausage, and fresh spinach. Sprinkle in Italian seasoning, salt, and pepper to taste. Cook until spinach wilts, about 2-3 minutes.
  7. Ladle the soup into bowls and top with grated Parmesan cheese.

Notes

For a spicy kick, add red pepper flakes. For gluten-free, use gluten-free pasta. Experiment with additional vegetables for more nutrition.
