Method

Prepare the Crust
  1. Combine the crushed graham crackers with the melted butter until the mixture resembles wet sand.
  2. Press this mixture firmly into the bottom of a springform pan, ensuring an even layer.
  3. Bake at 350°F (175°C) for about 8 minutes until golden and crisp.
Make the Cheesecake Filling
  1. In a large bowl, beat together the softened mascarpone cheese, cream cheese, and sugar until smooth.
  2. Gradually add in the eggs, one at a time, mixing to ensure no lumps remain.
  3. Add the fresh orange juice, orange zest, and vanilla extract, mixing until well combined.
Bake the Cheesecake
  1. Pour the cheesecake filling carefully over the prepared crust in the springform pan.
  2. Smooth the top with a spatula for an even surface.
  3. Bake at 325°F (160°C) for approximately 45-50 minutes until the edges are set and the center has a slight jiggle.
  4. Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Prepare Chocolate Ganache
  1. In a small saucepan, heat the heavy cream until it begins to simmer.
  2. Pour the hot cream over the dark chocolate chips in a bowl and let it sit for a minute.
  3. Stir gently until the mixture is silky and smooth.

Notes

For an impressive touch, add a layer of caramel sauce beneath the chocolate ganache or serve with fresh orange slices. Pre-make the crust a day ahead to allow flavors to meld. Ensure all ingredients are at room temperature for the creamiest texture.
