  • 1 cup small pasta (like ditalini or elbow macaroni) the star of the show that adds texture and heartiness
  • 1 can (15 oz) cannellini beans, drained and rinsed creamy, buttery beans that enrich the dish
  • 1 can (14.5 oz) diced tomatoes sweet and juicy, they offer a lovely base
  • 4 cups chicken or vegetable broth the savory foundation that brings it all together
  • 1 medium onion, diced aromatic and sweet when sautéed
  • 2 cloves garlic, minced adds flavor and aroma
  • 1 medium carrot, diced for crunch and a hint of sweetness
  • 1 stalk celery, diced for freshness and extra texture
  • 1 teaspoon dried oregano fragrant and herbaceous
  • 1 teaspoon dried basil rounds out the flavors
  • to taste Salt and pepper essential for enhancing all the flavors
  • 2 tablespoons olive oil for sautéing and richness
  • to taste Fresh parsley, chopped (for garnish) a pop of color and freshness
  • to taste Grated Parmesan cheese (for serving) for added creaminess and flavor

Method
 

Preparation
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot. Sauté until tender, approximately 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the can of diced tomatoes (with their juice), broth, oregano, basil, salt, and pepper. Stir and bring to a rolling boil.
  5. Once boiling, add the small pasta and cook according to package instructions, usually around 8-10 minutes, until al dente.
  6. Once the pasta is ready, gently stir in the cannellini beans and heat through for another 2-3 minutes.
  7. Ladle the Pasta Fagioli into bowls and sprinkle with fresh parsley and grated Parmesan cheese.

Notes

Use freshly cracked black pepper for flavor. Add a bay leaf during cooking, removing it before serving. Experiment with beans and seasonal vegetables. Serve with crusty bread.
