- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, and salt. Stir until smooth.
- Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
- Using a fork, press down on each ball to create a criss-cross pattern.
- Add a dollop of jelly in the center of each cookie.
- Bake for 8-10 minutes, until edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.

Serve warm with milk, store in an airtight container for up to a week, or freeze for longer storage.
