- In a medium saucepan, combine granulated sugar, brown sugar, cocoa powder, milk, and unsalted butter. Stir the mixture over medium heat until it begins to boil.
- Once boiling, let it cook for 1-2 minutes without stirring to allow the sugars to caramelize slightly. Remove from heat.
- Stir in the peanut butter until it melts and the mixture is smooth.
- Add in the quick oats, vanilla extract, and salt. Stir until well combined.
- Drop spoonfuls of the mixture onto wax or parchment paper.
- Allow the cookies to cool and set at room temperature for 30-60 minutes.
Notes
Measure carefully for best results, and allow adequate cooling time for proper setting. Storing cookies in an airtight container keeps them fresh for up to a week.
