Method
 

Preparation
  1. In a shallow dish, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
  2. Pour buttermilk into another shallow dish for marinating the chicken.
Frying
  1. Heat vegetable oil in a large skillet over medium-high heat until about 350°F (175°C).
  2. Coat each chicken breast in the flour mixture, shaking off excess flour.
  3. Dip each coated chicken back into the buttermilk to soak up moisture.
  4. Remove from buttermilk and dredge again in the flour mixture for double coating.
  5. Carefully place coated chicken breasts in the hot oil and fry for 6-8 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  6. Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
