Glaze

  • 2-3 tablespoons reserved pineapple juice Gives the glaze a pineapple flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9x5-inch loaf pan.
  3. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  4. In a large bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth.
  5. Add beaten egg, sour cream, and drained crushed pineapple to the cream cheese mixture. Mix until combined.
  6. Gradually stir the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60-70 minutes or until a toothpick comes out clean.
Glazing
  1. Whisk together powdered sugar and reserved pineapple juice until smooth.
  2. Allow the bread to cool in the pan for 10 minutes, then drizzle the glaze over the top.
  3. Let the bread cool completely before slicing.

Notes

For a flavor boost, consider adding chopped nuts or coconut flakes. Use an instant-read thermometer to check that the bread reaches an internal temperature of 200°F.
