  • 1.5 cups cooked jasmine rice Soft and fluffy rice for the base

  • 1 cup pineapple chunks Fresh or canned, both work well
  • 1 small red bell pepper, thinly sliced Adds color and sweetness

Sauces and Seasonings

Method
 

Preparation
  1. In a small bowl, whisk together the teriyaki sauce, soy sauce, honey, and minced garlic. Set aside.
Cooking the Shrimp
  1. Heat the sesame oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
  2. Pour the teriyaki sauce mixture over the cooked shrimp. Cook for an additional 2 minutes.
Adding Vegetables
  1. In the same skillet, add the pineapple chunks and red bell pepper slices. Cook for an additional 2-3 minutes until softened.
Assembly
  1. In serving bowls, layer the cooked jasmine rice, followed by the teriyaki shrimp and sautéed pineapple and bell pepper mixture.
Garnishing and Serving
  1. Top the rice bowls with chopped green onions, optional sesame seeds, cucumber slices, and fresh cilantro. Serve warm.

Notes

For more flavor, marinate the shrimp in the teriyaki sauce for 15-20 minutes before cooking. Feel free to use pre-cooked shrimp to save time.
