  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

  • 1/2 cup feta cheese Crumble
  • 1/4 cup chopped pecans or walnuts Optional

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the peeled and cubed butternut squash with olive oil, brown sugar, cinnamon, salt, and pepper.
  3. Carefully spread the coated squash onto a baking sheet lined with parchment paper.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  2. Once the squash is tender and golden, sprinkle the crumbled feta cheese and optional chopped nuts over the top.
  3. Return the sheet to the oven and roast for an additional 5 minutes.
  4. Remove from the oven and garnish with fresh parsley before serving.

Choose squash that feels heavy for its size for optimal ripeness. Prepping ingredients in advance saves time, and parchment paper eases cleanup.
