For the Roasted Carrots
  • 1 lb baby carrots Tender little jewels, bright and sweet.
  • 2 tablespoons olive oil Rich and fragrant oil.
  • 1 teaspoon salt Enhances the flavors.
  • 1/2 teaspoon black pepper Adds a hint of spiciness.
  • 1 teaspoon fresh thyme Aromatic and herbaceous.
For the Whipped Feta Dip
  • 4 oz feta cheese, crumbled Creamy and tangy.
  • 1/4 cup cream cheese, softened Provides a velvety base.
  • 1 tablespoon olive oil Ensures the dip is rich.
  • 1 tablespoon lemon juice Adds brightness.
  • 1 clove garlic, minced Adds aromatic flavor.
  • Salt and pepper, to taste For final seasoning.
  • Fresh herbs (for garnish, optional) For presentation.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the baby carrots with olive oil, salt, black pepper, and thyme.
  3. Spread the carrots out in a single layer on the prepared baking sheet.
Cooking
  1. Roast the carrots in the preheated oven for 20-25 minutes, stirring midway for even browning.
  2. While the carrots are roasting, prepare the whipped feta dip by blending feta cheese, cream cheese, olive oil, lemon juice, and minced garlic in a food processor until smooth.
  3. Taste and adjust seasoning with salt and pepper.
Serving
  1. Once the carrots are done roasting, remove from the oven and let cool slightly.
  2. Serve warm alongside the whipped feta dip, garnished with fresh herbs if desired.

Notes

For a lighter version, use low-fat cream cheese or Greek yogurt. Avoid overcrowding the baking sheet for roasting for ideal caramelization. Blend dip long enough for a creamy texture.
