Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, toss the baby carrots with olive oil, salt, black pepper, and thyme.
- Spread the carrots out in a single layer on the prepared baking sheet.
Cooking
- Roast the carrots in the preheated oven for 20-25 minutes, stirring midway for even browning.
- While the carrots are roasting, prepare the whipped feta dip by blending feta cheese, cream cheese, olive oil, lemon juice, and minced garlic in a food processor until smooth.
- Taste and adjust seasoning with salt and pepper.
Serving
- Once the carrots are done roasting, remove from the oven and let cool slightly.
- Serve warm alongside the whipped feta dip, garnished with fresh herbs if desired.
Notes
For a lighter version, use low-fat cream cheese or Greek yogurt. Avoid overcrowding the baking sheet for roasting for ideal caramelization. Blend dip long enough for a creamy texture.
