Preparation
  1. Preheat your oven to 375°F (190°C). Prepare the muffin tin by greasing it or lining it with paper liners.
  2. Heat a skillet over medium heat. Add the ground sausage and cook until browned and fully cooked, about 5-7 minutes. Then drain excess grease and set aside to cool.
  3. In a large mixing bowl, whisk together flour, baking powder, salt, and black pepper. Stir in shredded cheddar and Parmesan cheese.
  4. In a separate bowl, whisk together eggs, milk, and melted butter until smooth. Add to dry ingredients and stir until combined, being careful not to overmix.
  5. Gently fold in the cooked sausage until evenly distributed in the batter.
  6. Spoon mixture into prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until muffins are golden brown and a toothpick inserted into the center comes out clean.
  2. Allow muffins to cool slightly in the pan before transferring to a wire rack.
  3. Serve warm and enjoy!
