Seafood Bisque with Crab and Shrimp

Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, chopped
  • 2 stalks celery, chopped
  • 1 cup heavy cream
Flavoring Ingredients
  • 1 4 cups seafood stock or fish stock
  • 1 4 cup tomato paste
  • 1 teaspoon Old Bay seasoning
  • 0.5 teaspoon cayenne pepper (optional) For added spice
  • Salt and pepper, to taste
Seafood
  • 1 cup cooked crab meat
  • 1 cup cooked shrimp, peeled and deveined
Garnishes
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Method
 

Sauté Vegetables
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, carrot, and chopped celery. Sauté these aromatic vegetables until softened, approximately 5-7 minutes.
Incorporate Tomato Paste
  1. Stir in 1/4 cup of tomato paste and cook for another 2 minutes.
Combine Stock and Seasoning
  1. Pour in 4 cups of seafood or fish stock, followed by 1 teaspoon of Old Bay seasoning and the optional cayenne pepper. Season with salt and pepper as needed. Bring the mixture to a gentle simmer.
Blend Until Smooth
  1. Using an immersion blender, blend the mixture until it’s completely smooth.
Make It Creamy
  1. Return the blended soup to the pot, and stir in the 1 cup of heavy cream. Add in the cooked crab meat and shrimp for another 5-10 minutes until heated through.
Serve and Enjoy
  1. Ladle the bisque into bowls. Garnish with fresh parsley and serve with lemon wedges.

Notes

For added depth, consider adding saffron or smoked paprika. You can use other shellfish like lobster or scallops.
