Preparation
  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
  2. In a separate bowl, beat the eggs. Add in the milk, melted unsalted butter, and vanilla extract. Mix until smooth and well combined.
  3. Gradually add the wet mixture into the bowl of dry ingredients. Stir until just combined; the batter will be thick and slightly lumpy.
  4. Carefully fold in the diced apples, ensuring they are evenly distributed throughout the batter.
Cooking
  1. In a deep skillet or pot, heat vegetable oil over medium heat (about 350°F or 175°C). Test if the oil is ready by dropping a small dollop of batter; it should sizzle.
  2. Drop spoonfuls of the batter into the hot oil, careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until they are golden brown.
  3. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  4. In a small bowl, whisk together the powdered sugar, milk, and additional vanilla extract until smooth and well combined.
  5. Once the fritters have cooled slightly, drizzle the vanilla glaze over them.
  6. Serve these soft, spiced, and sweet fritters warm and enjoy.

Notes
