Preparation
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
- In a separate bowl, beat the eggs. Add in the milk, melted unsalted butter, and vanilla extract. Mix until smooth and well combined.
- Gradually add the wet mixture into the bowl of dry ingredients. Stir until just combined; the batter will be thick and slightly lumpy.
- Carefully fold in the diced apples, ensuring they are evenly distributed throughout the batter.
Cooking
- In a deep skillet or pot, heat vegetable oil over medium heat (about 350°F or 175°C). Test if the oil is ready by dropping a small dollop of batter; it should sizzle.
- Drop spoonfuls of the batter into the hot oil, careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until they are golden brown.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together the powdered sugar, milk, and additional vanilla extract until smooth and well combined.
- Once the fritters have cooled slightly, drizzle the vanilla glaze over them.
- Serve these soft, spiced, and sweet fritters warm and enjoy.
Notes
For extra flavor, consider adding a dash of nutmeg or clove. You can use a small ice cream scoop for easier portioning.
