Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  5. Beat in the sour cream, egg, vanilla extract, and almond extract until smoothly incorporated.
  6. Gradually add the dry mixture to the wet mixture, stirring until a soft dough forms.
  7. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Baking
  1. On a floured surface, roll out one portion of the dough to about 1/4 inch thick.
  2. Use cookie cutters to cut out festive shapes.
  3. Place the shaped cookies on the prepared baking sheets.
  4. Bake for 8 to 10 minutes, or until the edges are lightly golden.
  5. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks.
Icing & Decoration
  1. In a bowl, mix powdered sugar with a small amount of water or milk to create a smooth, glossy icing.
  2. Once the cookies are completely cooled, decorate with icing and sprinkles.

For best results, ensure your butter is at room temperature and don’t skip the chilling step as it helps the cookies hold their shape. Try using whole wheat flour or reducing sugar for healthier alternatives.
