Preparation
- Preheat your grill or stovetop griddle to medium-high heat.
- In a small bowl, mix together the mayonnaise, Sriracha sauce, ketchup, and a pinch of salt and pepper to create the spicy mayo.
- Divide the ground beef into four equal-sized patties and season each with salt and pepper on both sides.
- Lightly brush your grill or griddle with olive oil.
Cooking
- Place the patties on the heated grill and cook for about 4-5 minutes on each side.
- Add a slice of Pepper Jack cheese on each patty when they are nearly done, then close the grill lid for 1-2 minutes to melt the cheese.
- Toast the hamburger buns on the grill or in a toaster until golden brown.
Assembly
- Spread the spicy mayo on the bottom of each toasted bun, then add the burger patty with melted cheese.
- Top with fresh jalapeño slices, red onion, and any additional garnishes like lettuce or pickles.
- Finish with the top half of the bun and serve immediately.
Notes
You may try different bun varieties like brioche or whole grain. Avocado or sautéed mushrooms can be added for depth.
