For the Strawberries

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unroll the puff pastry on a lightly floured surface and cut it into squares, each about 4 to 5 inches in size.
  3. In a mixing bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
  4. Place a dollop of the cream cheese filling in the center of each pastry square, and fold the edges toward the center.
  5. Brush the edges with the beaten egg to secure them.
  6. In another bowl, mix the sliced strawberries with sugar and lemon juice, and let them sit for about 10 minutes.
Baking
  1. Place the assembled pastries on the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden brown.
  2. Let the Danish cool slightly and top each pastry with the strawberry mixture before serving.

Notes

For a healthier twist, consider using low-fat cream cheese or Greek yogurt. Store leftovers in an airtight container for up to three days.
