Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Unroll the puff pastry on a lightly floured surface and cut it into squares, each about 4 to 5 inches in size.
- In a mixing bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
- Place a dollop of the cream cheese filling in the center of each pastry square, and fold the edges toward the center.
- Brush the edges with the beaten egg to secure them.
- In another bowl, mix the sliced strawberries with sugar and lemon juice, and let them sit for about 10 minutes.
Baking
- Place the assembled pastries on the prepared baking sheet and bake for 15-18 minutes, or until puffed and golden brown.
- Let the Danish cool slightly and top each pastry with the strawberry mixture before serving.
