Method
Preparation of the crust
- Crush the Oreo cookies into fine crumbs.
- Mix the crushed Oreos with melted butter until uniform.
- Press the mixture into the bottom of serving cups to form a crust.
- Place the cups in the fridge to set while preparing the filling.
Make the cheesecake filling
- Beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, and mix until combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
Assembly
- Spoon the cheesecake filling into each serving cup over the crust.
- Smooth the tops with a spatula and return the cups to the fridge for at least 2 hours.
Prepare the strawberry topping
- Combine the diced strawberries with granulated sugar, if using, and let sit for 10 minutes.
Serve
- Top each cheesecake cup with sweetened strawberries before serving.
- Garnish with extra strawberry slices or crushed Oreos, if desired.

For richer filling, add lemon juice or zest. Ensure cream cheese is at room temperature for a smooth texture.
