For the Pineapple Rice
  • 2 cups cooked white or jasmine rice Preferably day-old for better frying.
  • 1 cup fresh pineapple, diced Infuses tropical vibe.
  • 1 tbsp sesame oil For sautéing veggies.
  • 1/4 cup red bell pepper, diced Adds sweet crunch and color.

Method
 

Prepare the Teriyaki Shrimp
  1. In a medium-sized bowl, combine teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated fresh ginger, and red pepper flakes. Add the shrimp, tossing to coat, and marinate for at least 15 minutes.
Cook the Shrimp
  1. Heat a large skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side, until pink and cooked through. Remove from heat and set aside.
Prepare the Pineapple Rice
  1. In the same skillet, pour in sesame oil and heat. Add chopped green onions, diced red bell pepper, and pineapple. Sauté for 2-3 minutes until softened.
Combine the Rice
  1. Add cooked rice to the skillet, breaking it up with a spatula. Stir in soy sauce, rice vinegar, garlic powder, and salt and pepper. Sauté for another 2-3 minutes until well combined.
Assemble the Stack
  1. Use a ring mold or bowl to layer pineapple rice at the bottom, followed by teriyaki shrimp. Gently press down to shape the stack.
Garnish and Serve
  1. Garnish stacks with chopped cilantro, sesame seeds, and a squeeze of lime juice. Serve immediately.

Notes

For extra flavor, add a splash of orange juice to the marinade. Swap shrimp for chicken or tofu if preferred. Ensure day-old rice is used for best results. Consider adding more red pepper flakes for an extra kick.
