Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat until smooth and well blended.
- Add the eggs one at a time, mixing fully after each addition along with the vanilla extract. Continue until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the peanut butter mixture, stirring until combined.
- Fold in the chocolate chips if using.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges are golden brown and the centers have set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before baking for thicker cookies. You can substitute half of the flour with oats or add chopped nuts alongside the chocolate chips for variety.
