Ingredients
  

Main Ingredients
  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup green onions, chopped
  • 4 tablespoons butter, softened
  • to taste Salt and pepper
  • Additional cheese for topping (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce each one a few times with a fork.
  3. Place the potatoes directly on the oven rack and bake for approximately 45-60 minutes, until fork-tender.
  4. Remove the potatoes from the oven and let them cool for a few minutes.
  5. Slice each potato in half lengthwise and scoop out the insides, leaving a small border around the skin.
Mixing Filling
  1. In a mixing bowl, combine the scooped potato with sour cream, shredded cheddar cheese, milk, green onions, softened butter, and salt and pepper. Mash until creamy.
  2. Spoon the filling back into the potato skins, mounding it slightly.
  3. Sprinkle additional cheese on top if desired.
Baking
  1. Return the filled potatoes to the oven and bake for an additional 15-20 minutes, until heated through and the tops are golden and bubbly.

Notes

For extra flavor, try adding cooked bacon bits or smoked paprika. You can also prepare the filling in advance to save time.
