Preparation
- Preheat your oven to 325°F (165°C).
- In a medium bowl, combine graham cracker crumbs and 1/4 cup granulated sugar. Add the melted butter and mix until well combined. Press this mixture into the bottom of an 8x8-inch baking dish lined with parchment paper.
- Place the crust in the preheated oven and bake for 8-10 minutes until golden brown. Allow it to cool on the counter.
Raspberry Puree
- In a small saucepan, combine the fresh raspberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat until the mixture thickens, about 5 minutes. Remove from heat and let cool.
Cheesecake Filling
- In a large bowl, beat the softened cream cheese and 1/2 cup sugar until smooth and creamy.
- Add the eggs one at a time, followed by the vanilla extract and sour cream. Mix until everything is well combined and smooth.
Assembly
- Pour the creamy cheesecake filling over the cooled graham cracker crust. Drop spoonfuls of the raspberry puree on top and gently swirl using a knife or toothpick.
Baking
- Place in the oven and bake for 35-40 minutes, or until the center is set but still slightly jiggly.
- Once baked, allow the cheesecake bars to cool at room temperature. Transfer to the refrigerator and chill for at least 3 hours before slicing.

- Once chilled, cut into squares and serve your delicious Valentine’s Day Cheesecake Bars!
Notes
Chill your ingredients for the best texture. These bars can be made a day in advance. Experiment with different berries or a chocolate crust for variations.
