Ingredients
  

Crust
  • 1 1/2 cups graham cracker crumbs Provides a delightful crunch and sweetness.

Cheesecake Filling
  • 16 ounces cream cheese, softened Gives the bars their luxurious texture.
  • 1/2 cup granulated sugar Sweetens the cheesecake filling.
  • 2 large eggs Provides structure and stability.
  • 1 teaspoon vanilla extract Adds a warm aroma.
  • 1/2 cup sour cream Imparts a subtle tanginess.
Raspberry Swirl
  • 1/2 cup fresh raspberries Offers a burst of flavor.
  • 2 tablespoons granulated sugar Enhances the natural sweetness of raspberries.
  • 1 teaspoon lemon juice Brightens the raspberry flavor.

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup granulated sugar. Add the melted butter and mix until well combined. Press this mixture into the bottom of an 8x8-inch baking dish lined with parchment paper.
  3. Place the crust in the preheated oven and bake for 8-10 minutes until golden brown. Allow it to cool on the counter.
Raspberry Puree
  1. In a small saucepan, combine the fresh raspberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat until the mixture thickens, about 5 minutes. Remove from heat and let cool.
Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese and 1/2 cup sugar until smooth and creamy.
  2. Add the eggs one at a time, followed by the vanilla extract and sour cream. Mix until everything is well combined and smooth.
Assembly
  1. Pour the creamy cheesecake filling over the cooled graham cracker crust. Drop spoonfuls of the raspberry puree on top and gently swirl using a knife or toothpick.
Baking
  1. Place in the oven and bake for 35-40 minutes, or until the center is set but still slightly jiggly.
  2. Once baked, allow the cheesecake bars to cool at room temperature. Transfer to the refrigerator and chill for at least 3 hours before slicing.
Serving
  1. Once chilled, cut into squares and serve your delicious Valentine’s Day Cheesecake Bars!
