Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and black pepper until well coated.
  3. Spread the sweet potatoes evenly on a baking sheet and roast for about 25-30 minutes, or until tender and lightly caramelized, stirring halfway through.
  4. In the last 10 minutes of roasting, add the chopped walnuts to the baking sheet to toast them lightly.
  5. Once the sweet potatoes are done, remove them from the oven and drizzle with maple syrup.
  6. Sprinkle the crumbled goat cheese over the sweet potatoes and walnuts and return to the oven for an additional 5 minutes to warm the cheese slightly.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

For optimal texture, choose firm sweet potatoes free from blemishes. Don’t overcrowd the baking sheet to avoid steaming. Watch the walnuts closely to prevent burning.
