Preparation
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press this mixture into the base of a greased springform pan.
- In another bowl, beat softened cream cheese and sugar together until smooth.
- Gradually add melted white chocolate, mixing until fully combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream until blended.
Baking
- Pour the batter into the prepared crust and bake for 50-60 minutes, until set but slightly jiggly in the center.
Strawberry Preparation
- While the cheesecake bakes, combine chopped strawberries with sugar and let sit for 15 minutes.
Cooling & Serving
- Once baked, cool the cheesecake completely in the pan before refrigerating for 4 hours or overnight.
- Before serving, top the cheesecake with macerated strawberries.
Notes
For best results, make the cheesecake a day in advance. Ensure cream cheese is fully softened before mixing. Avoid overmixing to prevent cracks.
